Bahian cuisine is arguably the most vibrant in Brazil — a deeply African-influenced culinary tradition that uses palm oil, coconut milk, fresh seafood, and pungent spices to create dishes of extraordinary complexity. Moqueca baiana, acarajé, and vatapá are far more than food — they are cultural ceremonies. In Salvador, Merola arranges private market tours through the Mercado Modelo, cooking classes with third-generation Bahian cooks, and intimate dinners at the city’s most exclusive contemporary restaurants pushing the boundaries of Afro-Brazilian cuisine.
